Five Knives You Should Own
A sharp, quality knife is your best friend in the kitchen. Each blade is mindfully developed for a specific cutting task, but how well do you know them? Below are five types of knives we believe every cook should own, with recommended uses to get the best results from your cutting efforts.

• Boning Knife: as the name suggests, this knife is engineered to remove bones from cuts of meat. The thin flexible blade is able to access small spaces, with stiff or flexible options for varying protein types.
• Serrated Knife: features a wavy, scalloped or saw-like blade. This special blade shape and sawing action is great for cutting items that are hard on the outside and soft on the inside (such as bread or tomatoes) as the edge easily slices through the exterior without crushing.
• Produce Knife: the rectangular profile and blunt edges safely cut through produce such as melons and citrus fruits.
Perhaps just as important as selecting the right knife for the job is proper maintenance and knife care. When using your knife, choose wooden or plastic cutting surfaces, as hard surfaces can dull or damage the blade. For food safety purposes, we recommend using a poly cutting board. After use, quality knives should be hand-washed with a mild dish soap and dried immediately; dishwasher detergent can dull knife edges and ruin the handle quality.
