Really sharp last along time. Review by FredPrice Quality Value I was first introduced to the Chicago Cutlery knife (844R) in 2009. Back then these were being used in a chicken processing plant. My friend acquired an 844R, and while serving dinner he accidently tipped the plate, it fell off and stuck straight up in between 2 Metatarsal Bones of my left foot. Missing my flip-flop and veins, I pulled the knife out and told my buddy that his knife was now mine.
For 10 years I used that old 844R for just about everything that needed to be cut in the kitchen. It is so easy to keep sharp. I wore the blade down so much that the vice on my Wicked Edge could not hold it properly. So, I purchased 6 more from Bunzl. Now, my girlfriend, son and I really enjoy the grip on the handle, removing silver skin and for other food preparation. The straight blade gives it more versatility. I just gave my podiatrist one today.
